Keep it in the fridge and it will last for ages. I usually wrap mine in clingfilm or sandwich bags.

(I have always used he same recipe as Lauren and if you keep stirring your pan should be ok.)

This is the first I've heard of this.
It is so sad and unfortunately I know how she is feeling and I hope the press leave her and her family well alone to learn to grieve and accept such a traumatic experience.
