As we've all gone slow cooker crazy, I thought it would be nice to have a thread for some of our favourites! I'll dig some out later on.

What do you think of the new homepage image - I think it reflects our current obsession quite well!

SALSA CHICKEN

* 1kg chicken breast
* 1 packet of taco seasoning
* 1 jar of salsa
* 1 can of chopped tomatoes
* 1 small can of sweetcorn
* 1 can of kidney beans
* sour cream

- Add all ingredients except soured cream to slow cooker
- Cook for 4-5hrs on medium
- Add 1/8 pint of soured cream before serving, stir
- Serve over rice, sprinkled with cheese

This is one of my absolute favourites, from here, I think this is the best site around for slow cooker recipes

SALSA CHICKEN & BLACK BEAN SOUP

--1 pound chicken (I used frozen breast tenderloins)
--1 cup dried black beans (or 2 cans, drained and rinsed)
--4 cups chicken broth
--1 cup sliced mushrooms
--1 cup frozen corn
--1 jar prepared salsa (16 oz)
--1 1/2 tsp cumin
--1/2 cup sour cream (to stir in at the end)
--shredded cheddar cheese, avocado slices, coriander (all optional)

If you know you are going to make this the night before (yay for meal planning!) soak the black beans in enough water to cover and another 2 inches overnight. In the morning, drain the water and rinse the beans.

If you don't have super hard water or live in a super high altitude, you can quick soak the beans by pouring boiling water over them and let them sit for an hour or two. I did an hour, but 2 would really be better if you have the time.

Drain and rinse the beans. Add to the crockpot. Put in the chicken, and add the broth and salsa. Pour in the corn and mushrooms, and add the cumin. Stir, but don't disturb the beans---let them stay at the bottom of the pot, closest to the heating element.

Cover and cook on high for 9 hours. Yup. High. For 9 hours. It took a crazy long time for the beans to soften, but they did.

If you are using beans you soaked overnight, canned beans, or pre-cooked beans, you can cook on low for 6-8 hours, or on high for 4-5--similar to normal soup-cooking time.

If you'd like to thicken the broth (I did this), you can use your immersible blender (I love that thing) to blend a bit of the beans and chicken. If you don't have one, scoop out 2 cups of the soup and carefully blend in your traditonal blender. Stir the mixture back into the crockpot.

Stir in the 1/2 cup of sour cream before serving, and garnish with shredded cheese and avocado slices.


(I just used tinned beans so they didn't need soaking at all)

Mushroom chicken

4 chicken portions - I use thigh as very tasty
4 sticks of celery - finely chopped
2 onion - finely chopped
at least 250gr mushrooms - sliced
chicken stock and a bit of cornflour (enough to cover all ingredients)
Potatoes - peeled and cut into portions (like roast size)


- Put the potatoes in the slow cooker first.
- Add all the ingredients. If the chicken portions are big - I like to brown them off first.
- Cover all the ingredients with the stock.
- Cook on Medium for for 5 hours
- If you wish you can add some cream to thicken the gravy as you serve.

I love cooking in my slow cooker but tend to do beef, lamb or mince recipes as I've never tried chicken in there before. I am definitely going to try the salsa chicken one though - sounds delicious.

I'm pretty lazy too... I tend just to chuck the meat and veg in with a jar - usually chilli, or a beef casserole jar. Yesterday I did lamb bhuna in there and it was very tasty and very tender.

You can put the chicken in frozen too which is a big bonus if you're disorganised like me!

Could you share the lamb bhuna recipe, or was it a jar one?

It was a jar - terrible ain't I :oops:

I must say I really like the idea of cooking chicken in the slow cooker but I've never done it because I wasn't sure how long to cook it for.

My mums Beef Stew.
I dont have an actual recipe as i done it from memory of seeing her prepare it when i was a child but this is the quantities i used for my 3.5L slow cooker.

3-4 medium potatoes peeled and cut into quarters
2-3 carrots
1 onion chopped
about 600g of beef/steak diced
2 handfulls of pearl barley
1 1/2 handfulls lentils
Dumplings (optional)

1)Brown off the beef/steak in a saucepan with the onions
2) Put the potatoes in first at the bottom then chuck everything else on top in any order
3) Use beef stock cubes (i use oxo) and dissolve in boiling water with quantities as instructed on the pack to cover all ingredients in the pot.
4) Cook on low for about 7 hours then add bisto or cornflour to thicken and turn on med/high for another hour.

I did a sausage cassrole in mine last night.

1lb Sausages
1 onion, chopped
3 carrots, chopped
1 red pepper, sliced
3 large potatoes, chopped into chunks
1 leek, sliced
Tin of chopped tomatoes
1 Tbsp tomato puree
1/2 pint of chicken stock

You just brown the sausages off first under the grill or in a frying pan, and then throw it all in a slow cooker and cook on low for 6 -8 hours.

It was lovely and sausages were so tender and soft.

We do a similar thing with sausages but instead of stock use a jar of pasta sauce or some tinned tomatoes. You can add a tin of cannelini beans and mushrooms too. This is very nice too.

OOh, I wonder if your casserole would work without the peppers... I think it would be yummy!

I'm doing a beef casserole for tonight. It's cooking away happily in my slow cooker as I type.

400g Beef Casserole Steak
Frozen casserole veg (I use sainsburys)
tin chopped tomatoes
1/2 pint beef gravy (I use bouillion for red meat)
Dash worcestershire sauce

I'm going to serve it with new potatoes, mashed and peas.

My stew and duplings

about 500g of beef mince
1 onion either chopped or whole ( i leave it whole for david as i dont like onion in a stew.....too slimey for me)
1 tin heinz muligatawny (sp?) Soup.
2 tins condensed tom soup,
2 tins water (use the condensed soup tin)
1 cup of grated or chopped potato
2 cups of grated carrots
1 cup of chopped carrots
1 cup yellow split peas
1 cup of Lentils (the orange ones)

my nan also turnip and suede to her stew. Every family seems to have their own version!

for dumplings, i use half and half self raising flour and atora suet, add a little water to make a soft but firm dough, drop little balls into bubbling stew about 20 mins before servings.....dont take off lid while they are cooking!!!!!!

I serve mine with curry powder sprinkled on the top, but thats just personal taste!!! x x

You need a large slow cooker for this!! I have a huge stock pot that I use just for stew, and i cook it on the hob.

add mince, split peas and lentils, cover with the water and cook until soft, skimming off the fat from the meat.

add the rest of ingredients and simmer, i tend to do mine for 3-4 hours. add dumplings 20 mins before serving.
