Organic Cloud Eggs

  • Organic room temperature eggs
  • Bread for toasting
  • 1 ripe organic avocado
  • Salt, pepper and/or chilli flakes for seasoning


  1. Preheat your oven to 230C or Gas Mark 8
  2. Grab your organic eggs and separate the whites from the yolks (this bit can be tricky so take your time)
  3. Place your whole yolks to one side and place the whites into a large mixing bowl
  4. Whisk the whites with a handy mixer at a medium speed until they are thick and contain stiff peaks
  5. Line a baking tray with baking parchment
  6. Spoon your fluffy mixture into mounds on the baking tray
  7. Make small indent in the top of the mixture (this is for your yolks in a bit)
  8. Bake the egg whites for 3-4 minutes
  9. At this point you may want to prepare your avocado – we cut it into slices but feel free to mash it with some small tomato pieces for a guacamole vibe.
  10. Once the egg whites are lightly browned, remove the tray from the oven and add the
    egg yolks
  11. Return to the oven for further 2 minutes
  12. Season with salt, pepper and chilli flakes and serve straight away with your avocado!
Other Optional Toppings
You can also add additional flavourings such as chives or finely grated cheese to the egg whites before you cook them.
Or you could serve the eggs with any of the following suggestions:
  • Crispy Organic Bacon
  • Organic Smoked Salmon
  • Sundried Tomatoes
  • Organic Asparagus

  1. My aunt used to prepare a variation of this on toast. Grated cheese was added to the beaten egg whites. We called them fluffy eggs. Delicious.
