Mini Fish Pies

Serves: 4 (makes 4 cakes)

These mini beauties are full of it – protein, carb, veg and dairy! You can use butter instead of oil and leek instead of spring onions, different fish or add frozen peas.. whatever it is it’s yum!!

Prep time: about 20minutes
Cook time: 50minutes

What do I need?
• 3 spring onions washed & chopped
• 1 carrot peeled & chopped small
• ½ tbsp olive oil
• 2 salmon steaks
• pinch of grated/ground nutmeg
• sprinkle of black pepper
• handful of Parmesan cheese (save some for the bake)
• 1 tea cup of milk
• 1 desert spoon of plain flour
• 2 large potatoes cooked & mashed

What do I do?
• Get your potatoes peeled, chopped & boiling
• Put carrot and spring onion in a pan with olive oil and stir on medium heat for a few minutes
• add Salmon and break up with wooden spoon
• add milk and flour and mix
• add parmesan, pepper & nutmeg
• pop the lid on and simmer for 10-15 minutes
• you should have a thick creamy sauce – to make thicker add more flour – to make thinner add more milk
• spoon mixture into silicone cases
• mash potato on top
• sprinkle of parmesan on top
• bake 200c for 30 minutes until crispy brown on top
• eat!
