Chickpeas and arugula salad

Another healthy and easy salad for those days when you have no time. Chickpeas will bring a balance of vegetable proteins and slow release carbs, for more filling power and to stave off those cravings.

Rocket (arugula), is one of the most nutritious green vegetables, rich in folate, vitamin K, magnesium and iron and its distinctive peppery taste will add texture to the simpliest of the salads. Tomatoes are rich in vitamin A, anti-oxidants and  vitamin C.  Its incredible how you can get so much nutrition in a such a simple salad!

Due to its  great as a stand alone salad for a quick lunch or a light dinner, or a side with some grilled fish. I have tried it with some fresh grilled mackerel and it was delicious

Ingredients:

  • 200 grams cooked chickpeas
  • 70 grams of wild rocket
  • 100 grams of cherry tomatoes
  • a couple of shallots
  • Extra-virgin olive oil
  • a dash of balsamic vinegar
  • a bit of dried oregano
  • a dash of lemon juice
  • sea salt to taste

Method:

Simply drain the chickpeas, ( you can use ready cooked ones) and put together with the vegetables, the finely sliced shallots and the seasoning. Serve with a slice of sourdough wheat and rye bread.
