Courgette Fries

courgettesJazz up courgettes and make them into crunchy fries.

Prep Time: 5 minutes

Cook Time: 20 minutes


  • 2 courgettes – diced into chips
  • 4 rice cakes
  • 1 egg
  • 1 tsp paprika
  • seasoning


  • Preheat the oven to 180 and grease and line a tray with coconut oil. 
  • Place the rice cakes into the blender and blitz for 5 seconds then pour into a bowl and season.
  • In a large bowl whisk the egg and add the sliced courgettes into the egg mix and coat well.
  • Take a few of the courgette chips at a time and place them into the bowl with the rice cakes and coat evenly on each side. 
  • Place them on the baking tray and roast them for 20 minutes.
