Poached Cod, Homemade Chips & Peas

Serves: 2 toddlers

This is a perfect healthy kids version of fish & chip Friday, and it’s pretty easy to do from scratch so give it a go!! We used a cod fillet from a bag of frozen fillets and just removed it from the freezer a few hours before we started cooking. It works great with salmon and haddock too.. Once cooked it’s lovely and tender, easy to pick up with tiny hands and delicious!

Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:

  • Boneless cod fillet
  • Lemon juice
  • 1 large potato
  • Olive oil
  • Frozen peas

Method:

  • Pre-heat oven to 225c
  • Peel and chop potato into thin chip shapes
  • Rub a little olive oil on
  • Pop in the oven on a shallow baking tray evenly spaced out for 20 minutes
  • Boil water in a pan and add a squirt of lemon juice
  • Once boiling turn right down to simmer and lower fillet into the water using a slotted spoon
  • Wait 4-5 minutes
  • Place a sheet of kitchen roll onto a small plate
  • Gently remove fillet with the slotted spoon and place onto plate and leave for 30seconds to allow excess water to drain
  • Put frozen peas into a tea cup and cover with boiling water, drain after about 5 minutes
  • Serve with chips and 1/2 cod filet for each kid
