Try our yummy chicken bruschetta…a very easy and healthy dinner (grain free and dairy free)

Ingredients
- 1tbsp olive oil
- Diced red onion
- 1-2 garlic cloves, crushed
- 200gm of cherry tomatoes sliced in halves and quarters
- Splash of balsamic
- Handful of basil, roughly chopped
- Goats cheese
- 2 avocados
- 4 chicken breasts
Instructions
- Heat olive oil in a pan
- Add diced onion and garlic and soften on medium heat for around 5 mins.
- Add cherry tomatoes and cook slowly for around 5-10 mins, add salt, pepper, splash of balsamic and half of the chopped basil.
- Place chicken breasts into an oven proof dish, season with salt and pepper and cover with the bruschetta topping.
- Bake at 180 for 20-25 mins (depending on size of chicken breast)
- Top with grated goats cheese for last 3/4 mins.
- To serve, place onto a bed of sliced avocado and top with the rest of the basil and salt and pepper.
- Serve with veg/salad of your choice. We served ours with aubergine fries and kale…delicious!
