Beetroot and Feta Salad

Tasty lunch alert! This was really delicious so thought I’d share. This is enough for two lunches and was super filling:

Ingredients

  • 1 pack brown rice (I used the easy cook pack rather than have it take ages)
  • 1 pack sweetfire beetroot
  • 2 can chickpeas
  • a few walnut halves, crushed
  • 75g of feta
  • 1 red onion, finely chopped
  • big handful of rocket
  • chicken or veg stock pot 
  • teaspoon of oregano
  • for dressing: 2 tsp rapeseed oil and 2 tsp cider vinegar, mixed.

Method

  • Stirfry rice, stock pot, red onion and oregano
  • Remove from the heat, divide between two pots.
  • Add chickpeas, beetroot and walnut and mix together
  • Crumble feta over the top
  • Drizzle over dressing and season
  • Serve with the rocket
  • Save half for tomorrow
